Whole Lotta Bird: Episode III - Return of the Chicke
The third instalment of my recent whole roasted chicken series. I won't bother going into detail with this one. It is exactly the same recipe as my Episode I entry only I used fresh rosemary instead of thyme. It turned out magnificent (and made my entire apartment smell phenomenal). I had accumulated three chicken carcasses by the end of it. The perfect use for chicken carcasses is to make your own homemade stock. I'll teach you all about it in my next post.
